Quick Tofu & Mix Vegetables Curry

Ingredients

  • 1 1/2 tbsp sunflower oil
  • 1 crushed garlic
  • 1 tin of chopped tomato
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 tsp chilli powder (mild)
  • 200 g Tofu
  • 1 cup each - green beans, mushrooms, carrots, peas - chopped
  • 1 cup of water
  • 200 g creme fraiche
  • salt

Method

  1. Heat oil in a pan. Add crushed garlic and cook until it is golden color.
  2. Add chopped tomatoes, garam masala, turmeric powder, corriander powder and chilli powder. cook for 5 min. on high.
  3. Add green beans, carrots and half a cup of water. Cook for 10 min on medium heat.
  4. Add creme fraiche, tofu, mushrooms and peas. Add half a cup of water and salt.
  5. Cook for another 5 min.
  6. Transer to a serving bowl and serve with rice.

Tips

For this dish, it is important not to cook vegetables too much.
