Summer Couscous Salad

Ingredients

  • 160 ml water
  • 125g couscous
  • 1 tsp olive oil
  • salt
  • 1/2 orange/red bell pepper - finely chopped
  • 1/2 cucumber
  • 50g Feta
  • 1 tsp cream balsamic - chili flavor
  • 1 tsp of herbs like dill/mint/coriander
  • 1 tsp finely chopped fresh green chili

Method

  1. Bring 160 ml. water to boil. Add couscous, olive oil, salt and cover the pot. Put it aside from the heat and leave it covered for 10 min.
  2. Take a bowl, add chopped orange bell pepper, cucumber, half of crushed feta and 1 ts. finely chopped dill/mint/coriander.
  3. Add couscous and stir everything well.
  4. Transfer it to the serving glass, put a layer of remaining feta and top it with cream balsamic.
  5. You can pair it with smoked salmon to eat as a main course or just the salad as the side dish for grill evening.
