crush ginger and chilli in a mortar and make paste.
Heat oil in a non stick pot. Add cumin and ginger-chilli paste and let it cooked approximately 1 min.
Add onion and capsicum and cook for 5 minutes on high- continuously stirring it.
Now add tomato, garam masala, turmeric and chilli powder.
Cook on high continuously stirring it for 5 minutes.
Add cooked rice and cook for another 5 min.
Add salt (keep in mind that rice already has salt) and lemon juice.
Remove from the heat and garnish with chopped coriander
Notes
For this dish it is important to cook vegetables on high continuously stirring it. If you cook on low, then vegetables will get watery which will spoil your dish.
