Guacamole

Recipe

Ingredients

  • 1 Onion
  • 2 medium size tomatoes
  • a bunch of fresh coriander
  • 1/2 fresh red chilli
  • 1/2 lemon
  • 4 very ripe avocados
  • Salt per taste

Method

  1. Chop onion in really small pieces and put it in a bowl.
  2. Chop tomatoes, coriander and half of the fresh red Chilli and add to onions.
  3. Squeeze half of the lemon juice, add salt and set it aside for 10 min.
  4. Meanwhile, remove the skin of Avocados and keep the seeds on the side for later use. Chop Avocado flesh into pieces. Mash them with a fork. (If Avocadoes are hard then mash them roughly by a stand mixer - do not puree in a paste..they should be rough consistancy as shown in the picture)
  5. Mix Avocado mixture to the onion-tomato mix and stir everything again with a fork.
  6. Adjust the taste with lemon and salt.
  7. Put the seeds of Avocado in the middle of the dish - This step is very important as it stops from Guacamole turning black and keeps fresh for a longer period of time.
  8. Serve with tortilla chips or freshly cut vegetables as dip.
(I learned this recipe from my friend Ludmila and over a period of time, tried and tasted different variations..sometimes pureed everything etc. etc but so far the above way of making has turned out the best!! so enjoy!)
